How Can Good Food Make Me Feel So Bad!
Many of my clients come to me because they want to know why they are feeling so bad. The majority of my clients know about nutrition and by most people's standards eat a healthy diet. Food is a powerful healer but it can also make you feel really sick. How can this be? We all believe that a balanced diet can't possibly be bad for you. What we often forget is that a lot of the food that we are now eating was not design specifically for human consumption. The plants we now farm are modifications of the original food source. While the plants have been modified in such a short span of time our bodies have not kept up to this rapid modification. Couple this with the fact that there are toxins we are constantly exposed to and the stresses of everyday life and you get the body adversely reacting to the food we feed it.
We all know about people with food allergies. A food allergy involves the immune system. The reaction is usually violent with a rapid onset after the allergen is eaten, often within minutes. The symptoms produced include swelling of the lips, mouth and tongue, hives, vomiting and in severe cases, collapse or anaphylactic shock. These cases are rather easy to diagnose as there is almost always a positive reaction to a skin-prick test with the suspected culprit . Some of the classic allergic symptoms are hay fever, constant runny nose, asthma, hives and swelling, eczema and vomiting. Some suspect that many diseases are connected to this allergic reaction but we will not address that here. The important fact to remember is that allergies can usually be diagnosed with a pin-prick test and need to be monitored with vigilance as a person’s reaction can be severe and immediate.
Food intolerances are a whole different ball game. The culprits with food intolerance are most likely the ones you eat every day. Your reaction to these foods is much slower. Milk and wheat are commons sources of intolerance symptoms and they are eaten almost in every meal for most Americans. Most processed foods contain some measure of wheat and diary. The fact that these foods are eaten so often and that they are so slow to react masks our ability to link them to our physical symptoms. Whereas a food-allergy reaction is provoked by small amounts of food – much larger amounts are needed with intolerances. Food intolerances are much more insidious, it is often difficult for someone to say when it began because the symptoms are mild at first but gradually get worse and spread to multiple areas of the body. People with this problem seem to collect more and more new symptoms as the years go by. They also become intolerant of new foods as their body becomes more affect.
The good news is that unlike allergies that usually persist for years, often a lifetime, even though the food is meticulously avoided, food intolerances may well disappear if the food is not eaten for a few months and won’t reoccur unless the food is eaten again on a regular basis.
The only reliable way to discover what foods are causing you issues is by creating an elimination diet plan. Once this plan is in place, you systematically eliminate the most common suspects for a set period of time, gauge how you feel and slowly re-introduce the food back into the diet. All this must be done in a very controlled manner or the food culrpits will not be clearly visible. I work with many clients to create an individual process that work best for their body, lifestyle and nutritional needs. My client and I are always surprised at how this process will totally change how they feel. The results are dramatic and life changing.
If you suspect that the food you are eating is making you feel bad then your are most likely correct.
You do not need to feel like this. You most likely do not need medication or treatments. You do need to make the connection between what you eat and how you feel. We all know the age old quote by "Let food be thy medicine, thy medicine shall be thy food".- Hippocrates. In the rush of everyday life we forget that we have the cure to many of the problems that plaque us daily. We turn to pills that never ever go to the cause of the problem. We will only be free when we choose the correct foods that heal and nuture the body.
Dr Mark Hyman sums up the reason we don’t hear all that much about the benefits of nutrition on our health in one of his recent newsletter. He says “According to a recent article in “The New England Journal of Medicine,” pharmaceutical advertising and promotion grew from $11.4 billion in 1996 to $29.9 billion in 2005 — and direct- to-consumer ads grew by 330 percent!
I can assure you that NO ONE is spending $30 billion promoting the benefits of food and nutrients to support health and cure disease, even if they are more effective.”

 Spring Food....
Lemon Asparagus Soup
1 quart chicken stock
1/2 box bow tie pasta
12 ounces asparagus, sliced
2 medium egg, beaten
1/4 cup lemon juice
1/3 cup green onion, sliced
salt and pepper, to taste
Heat chicken stock to a boil in a stock pot.
Add pasta and cook for 12 minutes.
Add asparagus and cook for 3 minutes.
Heat soup to boiling and add eggs and cook for 2 minutes.
Add lemon juice.
Serve in soup bowl, sprinkle green onions on top. Salt and pepper to taste.
This is soo easy and soo good. It is best eaten fresh and the pasta can “blow up” and make the soup a bit gummy after a day or sitting in the frig.
Spring Rolls
Rolls
1 large cabbage head
1 ounce dried black mushrooms
2 1/2 cups mung bean sprouts
2 medium carrots, peeled and cut into thin 2 inch-long julienne strips
4 medium scallions, trimmed and cut into julienne strips
1 small ginger, peeled and minced
8 ounces chicken breast, boneless and skinless poached and cut into julienne stripes
8 ounces shrimp, peeled, cooked and deveined
3/4 cup peanuts, coarsely chopped
1/3 cup cilantro leaves, whole, coarsely chopped
1/4 cup mint leaves, minced
1 Tablespoon dry sherry
1 Tablespoon soy sauce
2 teaspoons sesame oil
2 drops hot chile oil
5 1/2 teaspoons sugar
Sauce
1/4 Cup peanuts , dry roasted
1 small ginger, peeled and minced
2 cloves garlic, minced
1/4 cup sugar
1/4 cup soy
1 Tablespoon sesame oil
2 Tablespoons rice Wine Vinegar
2 Tablespoons tomato paste
1 1/2 teaspoons Dry mustard
2 drops hot chili oil
2 Tablespoons sesame seeds, lightly toasted
Bring a large pot of water to a boil. Remove the core of the cabbage with a sharp knife and discard it along with any wilted outer leaves. Immerse the cabbage in the pot of boiling water. Using thongs or a fork, gently remove the outer leaves until you have 12. Simmer the rest of the cabbage until tender, about 5 minutes more.
While the cabbage is cooking, soak the dried mushrooms in the boiling water for 20 minutes. Drain, trim away the tough stems, and slice the caps into thin julienne strips.
In a large mixing bowl combine the mushrooms with the bean sprouts, carrots, scallions and ginger. Finely shred the head of cabbage and add it to the bowl. Add in chicken, shrimp, peanuts, cilantro and mint. Sprinkle the sherry, soy, sesame oil, chile oil and sugar over the mixture, toss well to coat.
To assemble the spring rolls, place a cabbage leaf flat on a work surface. spoon 1/2 cup of the filing mixture in a compact log shape across the lower middle of the cabbage leaf. fold the bottom of the leaf over the filling and the sides of the cabbage leaf in, then roll it into a compact log. Place seam side down on a large plate or platter. Repeat until all the cabbage leaves are used. Cover with plastic and refrigerate for at least 2 hours or up to 12.
To make sauce. Place peanuts, ginger, garlic and sugar in a food processor and process to a paste. Transfer to a small bowl and add the rest of the ingredients. Transfer to a small serving bowl.
To serve. Cut each roll into 4 thick slices and serve with dipping sauce.
