Ah A Quiet Monday Morning And The Posssibilities Are Endless!

I a love day like this.  Worked all weekend and now a Monday without appointments .  Could I be in heaven?

I have all day to read, cook and relax.  I am in the process of writing my next seminar about how we can affect the health of the planet by eating what is also best for our bodies.  A two for one!

Here are some interesting facts:
If we just follow three rules not only would our life change for the better but we would dramatically improve the health of the earth.
1.  Eat a vegetable based diet.  The standard factory farm production of meat is a huge consumer of petroleum products, antibiotics, growth hormones and creates incredible suffering.
2.  Eat in-season and local.  Support the small local farmers.
3.  Eat organic - this includes meat that is humanely raised, grass-fed, and free of antibiotics and growth hormones.  Organic farms support an an eco-systems that is working to get our soil back into a state where are food is not nutrient depleted and ladened with chemicals.
Everytime you purchase a product you place your vote for the future.

If Americans were to reduce meat consumption by just 20 percent it would be as if we all switched from a standard sedan, like a Camry, to the ultra-efficient Prius.

60% of all fresh water in the United States is used for agriculture purposes. Agricultural chemicals account for 2/3 of all water pollution.

Ocean “dead zones” double in size every 10 years.  These areas are where ocean life cannot survive – they suffocate because the water lacks oxygen.

Our life expectancy is the shortest and our infant mortality rate is the highest of any developed nation.  In many countries with longer life spans have banned many of the chemicals we believe we need to grow food.

Only 20% of the pesticides used today have been tested for their effects on our nervous systems.  Of those tested 75% are known to cause cancer and are toxic to the human brain.
Roundup is the most used weed killer in the US.  Monsanto introduced GMO roundup seeds in 1998.  91% of all soybeans and 85% of all corn, 88% of all cotton in the US are from GMO seeds.  These plants are exposed to heavy doses of Roundup and survive all the way to our tables and our bodies.
If you think that GMO soy is no big deal consider that it is in everything from Crisco, to nondairy creamers, vegetable oil, ketchup, crackers, veggie burgers and vegan cheese.

Serious health risks are tied to GMO foods – infertility, immune issues, accelerated aging, cholesterol issues, insulin issues, changes in liver, spleen, and GI systems.
I could go on and on and the list is depressing.  We can still do something about this but it takes an effort by each and every one of us.  Vote with your grocery bucks.  I do!  I am counting down the days till the farmer's markets open. Heaven!
