Recipe for a rainy day!

Ahh what a nice Monday.  Okay so I don't have to go out of the office into the rain.  Yeah that could be it but it's not.  I have always loved rainy days.  Seems so relaxing.  Everyone is usually mellow.  No need to rush around outside to get every thing done. Of course my favorite part of rainy fall days is cooking comfort foods.
I made this tonight for Garson and I.  It is really easy and very delicious with a couple of slices of warm crusty bread.

Garlic Escarole Soup with Rice
Serves 4-6

1T Olive Oil
3 Medium Onions
4 Cloves of Garlic
8 Cups of Chicken Stock
1 T Dried Cracked Rosemary
Black Pepper to Taste
1t Salt, or to Taste
1/2 Cup Arborio Rice
Shredded Chicken or Dice a Breast or a Couple of Thighs
1 Medium Head of Escarole, Washed and Roughly Cut (about 5 cups)
Grated Parmesan Cheese To Taste

Place olive oil and onions in a pot big enough to hold all the soup ingredients.  Saute onions on medium heat until brown.  Add garlic and stir occasionally.  Add rosemary and pepper  Add chicken if uncooked otherwise add later.  If adding chicken now cook until brown.  Constantly scrape all the yummy debris on the bottom of the pan.

Add chicken stock and bring to a boil,  Add salt and rice, cook for 5 minutes.

Add cooked shredded chicken at this point and the escarole.  Simmer, covered until escarole and rice are tender.  Season to taste with salt and pepper.
