We had this for dinner tonight - it was excellent and super, quick and easy to make.
Serves 4.
Salad:
6 fresh lamb sausages, spicy Italian sausage, or garlic sausage.
Red onion slices
12 cups and of baby greens
3/4 cup goat cheese or feta
12 fresh figs, sliced
1/4 cup of freshly packed mint
Dressing:
7 1/2 T of extra-virgin olive oil
4 1/2 T of balsamic vinegar
3 T of mint
1/2 C of pomegranate seeds
1 T ground cumin
2 Shallots
Place in food processor and process until smooth.
Prepare grill (medium high heat) Brush sausage and onions with 3 T of dressing; grill sausage until cooked, about 15 minutes, and until onions are charred, 10 minutes. Toss greens with the remaining dressing; mound on the plate. Slice sausage and place on top of salad. Top with cheese, figs and mint.
This goes great with some fresh whole grain bread or a couple of ears of corn.
